Sour Cream - Orange Walnut Cake


Sour Cream - Orange Walnut Cake

This was a delicious cake, well suited to springtime! It was bright and light, and it would go great with coffee or tea. I think it would be a great twist to make this recipe into cupcakes and serve at an afternoon party.


Ingredients:

1 Cup Sugar, Creamed with:
1 cup Butter or Maragrine
3 eggs, separated
2 tbsp grated orange rind
2 tbsp or less lemon rind
2 cups cake flour
1 scant tsp baking powder
1 scant tsp baking soda
1 cup ground walnuts
3/4 cup sour cream

Directions:

Add yolks and grated rind to creamed butter-sugar mixture, stir till smooth. Sift together Sift together dry ingredients, dust some over the nuts, stir the rest into creamed mixture alternately with the sour cream; add nuts, and stiffly beaten whites.

Put in a buttered spring mold cake pan, bake 1 hr at 350 degrees. Remove while hot, prick all over with a fork, and baste with:

2 tbsp orange juice
1 tbsp lemon juice
3/4 cup of sugar.

Bring to a boil spoon over hot cake.
