Applesauce Cake with Broiled Walnut Frosting

What a great cake! This tastes like a classic spice cake, the applesauce lends depth and the vinegar adds a subtle tang. The frosting is great, the next time I make this one I'll serve it with some vanilla ice cream or fresh whipped cream. Like the bread pudding, this cake also pairs well with a scotch :)




(Makes 1 8-inch square cake)


Cake Ingredients:


2 cups sifted cake flour
1 tsp baking soda
¾ tsp salt
¾ tsp cinnamon
½ tsp cloves
½ cup shortening
1 cup firmly packed light brown sugar
1 egg
1 cup sweetened applesauce (canned is fine)
1 ½ tsp grated lemon rind
3 tbsp vinegar
1 cup plumped seedless raisins


Cake Directions:


Sift flour, baking soda, salt and spices together.
Cream shortening until soft and smooth.
Add sugar gradually creaming till light and fluffy.
Add egg and beat until very light.
Combine applesauce, lemon rind and vinegar and add alternatively with dry ingredients, beating well after each addition.
Stir in raisins.
Turn into greased 8x8 pan 2 inches deep.

Bake at 350 for about 45 minutes.


Frost with:


Broiled Walnut Frosting


Ingredients:


2 ½ tbsp butter or margarine
½ cup firmly packed brown sugar
2 tbsp cream
½ cup chopped walnut meats


Directions:


Melt butter or margarine.
Add remaining ingredients and blend.
Spread on cake.

Broil under broiler 3 or 4 inches from heat until bubbly




Notes:


I don't have many notes for this one, it went together pretty smoothly! I used raisins from the bulk section, and had them steeping in hot water to plump them while I assembled the rest of the cake.


I served the cake directly after broiling the frosting, which made it hot and melty. Like I mentioned, I think that would really pair nicely with some vanilla ice cream or fresh whipped cream. I can also say, that the cake holds up and is still delicious the next day, with coffee.
